Another Round Another Rally

2026 Casa Jacaranda - Mexico City Culinary + Cultural Education for Bartenders
Opens Jul 29 2026 12:00 AM (MST)
Deadline Aug 27 2026 11:59 PM (MST)
Description

Another Round Another Rally is excited to announce the return of our immersive education experience in Mexico City made possible by the generous support from Teremana Tequila and Art Beyond the Glass!

Applications for this program open on July 29th 2026. Eligible applicants will first participate in part one of the program; a unique and comprehensive virtual course led by Casa Jacaranda’s own Jorge Fitz and Anna Quintero. They will lead us through the culinary history of Mexico spanning two classes across August 10th and 11th. The classes will be 1 hour and 15 minutes each and will be recorded for those unable to attend the live sessions (but we encourage all who can to join live). After finishing the classes, applicants will be asked to take a test on their newfound knowledge that will include multiple choice questions, essay questions and a cocktail recipe inspired by their learnings.

Following the virtual course, we’ll be selecting eight top scoring bartenders to join us in Mexico City for a 3 day intensive cultural and culinary experience in order to learn and preserve Mexican ancestral cooking techniques. In addition to culinary training, students will learn about native Mexican produce, products, beverages and culture. The goal of this program is to provide bartenders with a back of house foundation and cultural framework that will invigorate their beverage programs and career pathways!

We will kick off the experience with a delightful breakfast in an abuela-style "fonda" (old-school eatery) at the heart of a traditional neighborhood market. From there, we’ll immerse ourselves in the rich tapestry of Mexican cuisine with a captivating tour, delving into the secrets of chiles, herbs, vegetables, fruits, and the fascinating history behind them. And yes, we then roll up our sleeves and dive into cooking authentic recipes, savoring the fruits of our labor together.

The subsequent days are dedicated to mastering approximately 30 recipes, with a focus on Mexican ancestral techniques, many in the cherished abuela (grandma) style. From traditional street food and tantalizing tacos to comforting breakfasts and exquisite moles – we've got it all covered!
